Editorial independence
The Candied Compass is an independent editorial publication. We do not sell reviews, rankings, placement or “best of” positions. No confectioner, brand, importer or publicist has ever paid for a mention on this Site, and none ever will.
We accept samples for the tasting table because tasting is the job. Accepting a sample creates no obligation to write, and a negative or lukewarm note is published with exactly the same prominence as a glowing one. Where a maker has provided travel, hospitality or anything else of value, it is stated inside the article itself.
No affiliate commerce. There are no affiliate links, no sponsored posts, no shopping widgets and no checkout anywhere in this publication. Our revenue does not depend on what you buy.
How we taste
Every candy that reaches the tasting table is sampled at least twice, on separate days, at room temperature, by a minimum of three panellists. Where practical the first pass is blind. We record aroma, initial taste, mid-palate, finish, texture and how the flavor changes as the piece warms.
Scores and flavor-family assignments in the Flavor Profile Matcher are our editorial interpretation of those sessions. They are a guide to character, not a laboratory measurement, and reasonable people will disagree with them.
Kitchen safety
Confectionery involves sugar heated well beyond 150°C / 300°F. Molten sugar adheres to skin and causes severe burns. The techniques, temperatures and timings described anywhere on this Site are general culinary information for competent adult home cooks — they are not professional training, and they are not a substitute for hands-on instruction.
- Use a deep, heavy pan and never fill it more than half full; syrup foams violently when it boils.
- Keep children and pets out of the kitchen while sugar is on the heat.
- Keep a bowl of cold water within reach and cool any burn under running water immediately, then seek medical care.
- Never leave caramelising sugar unattended; the window between amber and burnt is measured in seconds.
- Follow the instructions supplied with your own thermometer, moulds and equipment, which take precedence over anything written here.
You are solely responsible for your own kitchen, your equipment and your judgement.
Food, allergens & health
Articles frequently mention dairy, nuts, soy, wheat, sesame and other common allergens. Ingredient lists in our writing are illustrative and may be incomplete or out of date. Always read the actual manufacturer’s label before eating anything, particularly if you have an allergy or intolerance.
Nothing on this Site is medical, nutritional or dietary advice, and no statement here should be read as a claim that any candy prevents, treats or cures any condition. Descriptions such as “cooling”, “warming” or “palate reset” refer to sensory impression only. If you have a health condition or a specific dietary requirement, consult a qualified professional.
Opinion & subjectivity
Taste is personal. Our tasting notes, pairings and flavor-family groupings are the opinions of the individual writers credited with them, formed on the batches we happened to receive. Recipes change, harvests vary and a maker’s second batch may differ from the first.
Pull quotes attributed to contributors reflect their views at the time of the interview. Named contributors write in a personal capacity and do not speak for their employers.
Makers & mentions
Naming a confectioner, an ingredient supplier or a technique is not an endorsement, a certification, or a guarantee of quality, safety or business conduct. We have no control over how any third party makes, labels or ships its products, and we accept no responsibility for them.
Prices, availability, opening hours and product lines are never listed here, precisely because they change faster than an editorial page can keep up with.
Corrections policy
We would rather be right than first. If you spot a factual error — a wrong temperature, a misattributed technique, a misspelled name — email candiedcompass.desk@gmail.com with the subject line “Correction”.
Verified factual errors are fixed promptly and noted at the foot of the affected article. Matters of taste and opinion are not corrections, but we read every disagreement and occasionally publish a follow-up.

To the fullest extent permitted by law, The Candied Compass accepts no liability for any loss, injury or damage arising from reliance on material published here, including burns, spoiled batches, allergic reactions or equipment damage. This disclaimer forms part of, and should be read with, our Terms of Use.
